That depends on the airport. At some of the major airports, the check in desk only opens at a particular time before the flight- often, it's 2 hours. I got stuck sitting around in the airport in Thailand that way, because I couldn't check my luggage and go through to the lounge. At smaller airports, if there are other flights for that airline, the desk will be open and you can check your luggage at any time.

Read the terms on your ticket. It's all on there. If you're flying very early in the morning you can often check baggage the night before.
