Because many airlines overbook flights. You could be bumped
In case they want to X-Ray your underpants.
So they can make you wait
To go through the screening, which can take forever.
To get through security and make it to the gate before boarding ends. Security lines can be long and take time to get through. There can also be long lines checking in.
Because when its time to close the door to the plane, they don't care if you're stuck in security
To make sure that you have time to get through check-in and security, and that you are there in time to board the flight. Boarding starts 30-60 minutes before departure, depending on the particular flight, and the door closes 10-15 min before departure. Having you get there early helps make sure that you are there when they need you to be.
Because if you arrive at the airport after your flight has left, you won't be going anywhere other than back home.
Because just because you and your luggage are at the airport, it doesn't mean you are at your gate and plan when the flight is ready to leave.
You have to get them your luggage with enough time for them to find your flight and load your luggage on it.
You have 2 line ups, one at check in and one going through security. Either could take 5 minutes or 45 minutes.
Finally it takes about half an hour to load passengers on the flight and prepare the plane for takeoff. So they want you at the gate by the start of boarding time.
So that you won't be late for your flight.

My local news just talked about a flight having to return to the airport after "mechanical issues with the nose gear", but then it said that the plane had to circle the airport for about an hour "ro burn off enough fuel for landing".
