Why do mainline airlines still charge more for a one way ticket than half of a round trip?

Because on round trip ticket they get: baggage fees twice, airport snacks sold twice. So it makes up some, for the reduced fare of a round trip ticket.

Airlines charge what they can. The more flights you have the cheaper they are.

There's a cost to just make a booking for you. The more they can book at the same time the lower the cost in staff time. One invoice instead of two.

A reward for the customer that flies a little more with them.

Because each way is priced based on demand. If the outbound is empty and the return is full, it wouldn't be profitavle for the airline to charge the same
